I always feel it is ea...Glad it went well, Earlene. I always feel it is easier to can meat than it is garden produce, meat takes much less time to prep. I have had so much canning this week between turkeys and chickens that I actually canned my turkey meat in quarts. I have completed 4 of the 6 turkeys and also 9 chickens. I still have a fair amount of the chicken meat in the fridge but am trying to can the broth as I go as it takes up so much space. I am currently at 44 quarts of turkey bone broth, 28 quarts of chicken bone broth, 15 quarts of turkey meat and 12 pints of chicken. I still have a couple of plastic ice cream buckets of turkey and chicken in my fridge that I need to can this weekend, along with cooking off the last two turkeys. It is supposed to be rainy on Sunday so I am planning on turning off the freezer tomorrow, that will give me forced deadline on the two remaining turkeys. I got 6 pints of meat from a 14 lb. turkey. The process went fairly smooth. This is only my 2nd attempt at canning meat so I'm thrilled it went so well. If I didn't have any trouble with the turkey, I think broth should be pretty easy.
